In the latest edition 2022/23, new stars shine in the culinary sky, enriching the diversity of the island's culinary scene. Fusion19, under the direction of talented Palma chef Javier Hoebeeck, has caused a stir with its innovative fusion of Mediterranean and Asian flavors. This gastronomic gem in Playa de Muro has secured a well-deserved place among the island's prestigious Michelin-starred restaurants.

1. DINS Santi Taura

Close to the cathedral, just a five-minute walk away, is the El Llorenç Parc de la Mar Hotel. Here at the DINS restaurant, local chef Santi Taura conjures up traditional Mallorcan recipes with a modern twist. The lunch tasting menu is particularly recommended, as it reinterprets Mallorcan flavors in innovative ways. Make reservations well in advance to avoid disappointment. Santi Taura is a well-known name in the world of Mallorcan gastronomy. He enriches his creative dishes with the "historical memory" of Balearic cuisine, delighting both traditionalists and gourmets who like to experiment.

Santi Taura has returned to his city of study, Palma, bringing with him concepts from his eponymous restaurant and DINS in Lloseta. The new DINS Santi Taura restaurant at Hotel El Llorenç Parc de la Mar overlooks the sea in the historic Jewish neighborhood of La Calatrava.

The bar extends from the kitchen in the back and offers a personal atmosphere. In addition to this bar, there are ten other tables in the modern interior. The "DINS a la carte" menu offers a choice of newly interpreted Mallorcan classics. The main courses delight with fresh side dishes of salad and vegetables. The dessert "Walk through the Sierra Tramuntana" rounds off the experience.

2. bens d'Avall in Deià

In the heart of Mallorca you will find Bens d'Avall. The restaurant first opened in 1971 and has undergone a remarkable transformation since then. Run by Benet Vicens' mother and grandmother in the early days, today Benet himself is at the stove, forming an unbeatable culinary team with his talented 23-year-old son.

The location of the restaurant, just 1,500 meters from the Deià to Sóller road, gives the visit an escape from everyday life and reminds you of the beauty of Mallorca. The terrace offers stunning views of the mountains and the Mediterranean Sea. In 2016 it was completely renovated to create a more relaxed atmosphere.

The cuisine is modern but Mallorcan - healthy, natural and creative. Benet and his son Jaume draw inspiration from Mallorca's seasonal produce to create dishes that combine tradition and innovation.

Bens d'Avall is undoubtedly one of the finest restaurants on Mallorca, both in terms of location and ambience, service, and cuisine. Prices reflect the quality, but for an unforgettable culinary experience, the visit is more than worthwhile.

Adrian Quetglas

3rd Adrián Quetglas in Palma

Adrian Quetglas, raised in Buenos Aires with a Mallorcan father and paternal grandparents, combines in his dishes the culinary traditions of his grandmother and the Argentine specialties of his homeland. This unique cuisine, which combines two ethnic influences to create innovative dishes, is reflected in his culinary ingenuity. His professional experiences in kitchens from Paris to Moscow have perfected his technique.

Since 2017, Adrian Quetglas has held a Michelin star, a sign that diversity and creativity bring about positive change.

The modern and stylish restaurant offers both indoor seating and tables on the covered terrace.

Marc Fosh

4th Marc Fosh in Palma

Before opening his own restaurant, Marc Fosh was the first British chef in Spain to be awarded a Michelin star. His restaurant, in a converted 17th-century monastery, also received a Michelin star in 2015, which it has retained every year since.

The restaurant's modern interior features natural light, contemporary art, and a courtyard for al fresco dining in good weather. Marc Fosh emphasizes creative, modern Mediterranean cuisine based on fresh, seasonal and local ingredients, often using herbs and medicinal plants.

Once known as El Jardín, this restaurant now bears the name of its leading chef. It is part of the de Castro family gastronomy business in the north of Mallorca and has held a Michelin star since 2012, which it retains every year.

The cuisine combines traditional Mallorcan and Mediterranean dishes with creative modernity, using premium local ingredients. The regularly changing tasting menu is balanced and exciting.

Special attention is paid to underrated Mediterranean fish dishes and tasty meat creations that combine tradition and avant-garde haute cuisine.

8 Andreu Genestra

Nice-born chef Andreu Genestra runs his eponymous restaurant at Hotel Zoëtry Mallorca in Llucmajor. Similar to Macarena de Castro, he uses the off-season to travel and gain new culinary experiences, such as guest chef appearances at luxury hotels in India. Andreu Genestra received his first Michelin star in 2015 and retains it until 2023.

In a Mallorcan mansion, respected chef Andrés Genestra is working on his new culinary concept. Upon entering Andreu Genestra's new restaurant, a clear message is conveyed: Floating above the entrance, almost as if they were Andreu's personal thoughts and passions, are traditional Mallorcan foods such as pickled fruits, olives and pickled vegetables that form a rising spiral. This is an impressive tribute to the "rebost," the traditional Mallorcan pantry that once supplied the kitchens of our grandmothers with staples. The central concept that shapes the menu and Genestra's culinary identity is the Mediterranean in all its facets, both in its forms and flavors, and in its temporal dimension and way of understanding processes.

Renowned chef Fernando Pérez Arellano's legendary Zaranda continues to enchant the senses in the heart of Palma's old town. You'll find this culinary gem within the luxurious Hotel Es Princep, but with its own independent access.

Rising on the historic foundations of a former tannery, Zaranda restaurant cleverly plays with the roots of the place and words. Based on tantalizing tasting menus with resonant names like "Hypodermis," "Dermis," and "Epidermis," it serves extraordinary pickled entrees, all of which borrow from the Arab world and the history of leather tanning. A special highlight for the guests is the transparent floor, which provides a glimpse into the partially preserved remains of the old tannery.

In 2016, he found his culinary home at Fusion 19, a restaurant belonging to Grupo Boulevard. There, he rose to head chef within a year, and Fusion 19 quickly earned a coveted Michelin star.

The culinary highlight of Fusion 19 is a 13-course menu served in five exciting phases. Each dish tells the story of Javier's travels and reflects his culinary influences. Guests can look forward to artfully prepared dishes, from small delicacies to more sumptuous delights. These creations are a testament to Javier's vast knowledge of fresh flavors and ingredient origins.
